The new Blu-ray has better detail and compression. The new master's grading is superior overall, but its presentation here suffers relative to the UHD, likely due to it being a tonemap from HDR rather than a dedicated SDR grade.

Audio notes: The Sound of Music was produced as a 70mm Todd-AO presentation, with an accopanying with a 6-track audio mix in the following channel configuration:

Incompatible venues used a 4-track or a mono mixdown instead.

As this layout fell out of fashion in the proceeding years, the full mix with discrete left-center and right-center channels has never been released on home video. The APT-X100 DTS 70mm track used for the 2002 70mm screenings is available online, but unfortunately it's heavily noise reduced and sounds relatively poor as a result. Its filering also resulted in some sound effects being attentuated, such as the famous slap in the opening scene. Those mistakes were carried over to the widely-panned 2010 Blu-ray 7.1 remix, for which it served as a base.

Very surprisingly, the new Atmos track rights those wrongs and sounds great. It appears to be a very light remix with outstanding fidelity, which remains faithful to the original.

The best transfer of the original 6-track mix itself is the AC-3 track on the 1994/1996 LD releases (with the lossless stereo counterparts on those releases being just fold-downs), which is stated to be a straight transfer of the original sound elements, with the only alterations made being conforming it to a typical 5.1 layout (minus LFE).

Both are included as options here.

(Although the 1989 LD appears to be sourced from a 35mm print (judging from its video), its audio track is indistinguishable from a mixdown of the later 5.1 track. I suspect there was never a discrete 4-track mix produced, and it's always been a mixdown from the 6-track.)[/spoiler]
